If you're a fan of gyros, you're gonna love this chicken Gyro Salad with Creamy Tzatziki Dressing! It's light, flavorful and filling without all the extra added calories.
Chicken Gyro Salad with Creamy Tzatziki Dressing
Chicken Ingredients:
- 1 lb. boneless/skinless chicken breasts
- 1 Tbsp. red wine vinegar
- 2 Tbsp. extra virgin olive oil
- 1 clove garlic, minced
- 1 tsp. dried oregano
- 1/2 tsp. dried thyme
- 1/8 tsp. black pepper
- 1/8 tsp. salt
Put the chicken breasts in a baking dish or other container. In a small bowl combine the red wine vinegar, olive oil, herbs, minced garlic, salt and pepper, mix well. Pour this mixture over the chicken and allow it to marinate for 15 minutes.
When the chicken is done marinating, put it in a pan over medium-high heat and cook until the chicken is no longer pink. Make sure to flip the chicken breasts so you get a bit of coloring on each side.
While the chicken breasts are cooking prepare the Tzatziki Dressing.
Tzatziki Dressing Ingredients:
- 1 (5.3 oz.) container plain greek yogurt
- 1 English cucumber
- 1 Tbsp. lemon juice
- 1 Tbsp. extra virgin olive oil
- 1 clove garlic, minced
- 1 tsp. dried dill weed (Adjust the amount of this to your liking)
- 1/8. tsp. salt
- 1/4 tsp. black pepper
Cut the cucumber in half. Use one half for the Tzatziki dressing and use the other half for the salad.
Peel the one half of the cucumber for the dressing and grate it using a grater.
Take the shredded cucumber and wrap it in paper towels and squeeze it to get the extra moisture out. You want the shredded cucumber to be pretty dry. Put the dry, shredded cucumber in a medium-sized bowl.
To the shredded cucumber, add the lemon juice, olive oil, minced garlic, dill, salt, pepper and yogurt. Mix well and put in the refrigerator until ready to use.
When the chicken breasts are done cooking and no longer pink, remove from the heat and allow them to rest a bit (about 5 minutes) before you slice it for the salad. Cut the chicken breasts into slices, making sure to cut the slices at an angle.
Salad Ingredients:
- Flat bread, any flavor, cut into wedges
- Romaine lettuce, chopped (chop up however much you want to eat β I chopped 3 cups)
- 3 Roma tomatoes, sliced into wedges
- The other half of the English cucumber, cut into slices
- A few thin slices of red onion
To present, put some of the chopped Romain lettuce on a plate, top with sliced chicken breasts, cucumber slices, tomato wedges and sliced red onion. Put the Tzatziki Dressing in a mini glass bowl and add the flat bread wedges to the side of the salad.
