Chile Dusted Shrimp with Corn and Peppers

Chile Dusted Shrimp with Corn and Peppers

8 oz. shrimp
1 red bell pepper
2 cloves garlic
1 thumb fresh ginger
2 scallions
1 can corn
2 Tbsp. white wine vinegar
1 tsp. chile powder
2 Tbsp. sugar
2 Tbsp. olive oil

Combine chile powder and 1 tsp. sugar in a bowl. Season shrimp with salt and pepper and toss in the seasoning. Set aside. Mine the ginger and garlic, slice the scallions keeping the white and green parts separate. Dice the bell pepper and drain the corn.

Heat one tsp. olive oil in a pan over medium-high heat. Add the white scallions, bell pepper, garlic and ginger. Saute for 3 minutes. Add the remaining sugar, corn, and vinegar. Cook for 3 minutes. Add the scallion greens and salt to taste.

Wipe the pan clean and heat another teaspoon of olive oil. Once hot, add the shrimp and sauté for 3 minutes until done. Serve the corn relish and top with the chile dusted shrimp.
