Easy spinach Goat cheese Salad
Spinach is packed with nutrients and is relatively frugal. Plus, it stays fresh longer than other greens, leaving less waste (who else is guilty of throwing away fresh produce?). This Spinach and Goat Cheese Salad is one of my favorite salads. Even though the goat cheese can be somewhat expensive, a little bit goes a long way. One 4-oz container (which I purchased at target for $3.99) was good for about 8 servings. It's sure to impress even the most discerning dinner guest!
