Holiday Treat: Andes Mint Cookies

These cookies are becoming my husband’s specialty – he is known for making them. They are a bit deceptive – they look a lot like regular chocolate chip cookies, but with the yummy and surprising flavor of Andes Creme de Menthe. I found the Andes mints at Walmart.

Andes Mint Cookies Recipe

1 stick butter
3/4 cup packed brown sugar
1/2 cup white sugar
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoon vanilla
2 eggs
1 package Andes Creme de Menthe Baking Chips
2 2/3 cups flour

Blend together butter, sugars, baking soda, baking powder, vanilla and eggs. Stir in baking chips and then flour. Chill the dough in the refrigerator for 1 hour. Shape into teaspoon-sized balls and flatten slightly on a baking sheet. Bake at 350 for 8-10 minutes.
