Holiday Treat: Chocolate Mint Pebbles Treats

Have you seen all the new flavors of Kraft marshmallows? I was going to make Rice Krispie Treats with the gingerbread ones, but when I saw these chocolate mint flavored marshmallows at the store, I had to buy them! I love chocolate and mint together (I even made my own chocolate mint flavored marshmallows recently!)

Instead of using them with Rice Krispies, I used Post Cocoa Pebbles cereal to make these yummy chocolate mint treats. We cut out gingerbread men shapes using a cookie cutter, and the kids helped decorate them with holiday M&Ms and snowflake sprinkles. If you like the combination of chocolate and mint, you will LOVE these treats!

Chocolate Mint Pebbles Treats

3 tablespoons butter or margarine
4 cups Kraft chocolate mint flavored marshmallows
6 cups Cocoa Pebbles

Melt the butter and marshmallows together in a large saucepan. Stir until completely melted. Stir in the Cocoa Pebbles cereal until well combined. Press tightly into a 9×13 pan layered with waxed paper. Once the treats harden, use a cookie cutter to cut out shapes. Then, decorate as desired!

*Tip: I put another layer of waxed paper on top of the treats and rolled them out with a rolling pin before cutting.  This made them thin enough for my cookie cutters, and also helped packed the treats together.
