These North Pole cupcakes make a fun christmas treat, as well as an activity for the kids after school or on Winter break. My kids always enjoy helping in the kitchen, and decorating cupcakes – well, you can't go wrong with that. The North Pole cupcakes are so easy to decorate, even my 2 year old got to help.
I used my recipe for Coconut Cupcakes to make the basic cupcake with cream cheese frosting. If you are a coconut fan, this recipe can't be beat. It has been a hit with all coconut lovers, including the friend I made the North Pole cupcakes for. However, you can use ANY cupcake recipe, including a box mix, and ANY white frosting. A white cake mix with a dash of peppermint extract would be good!
Once the cupcakes had cooled, I generously frosted them with cream cheese frosting. Then, my helper dipped the cupcakes in shredded, sweetened coconut flakes. We sprinkled more coconut flakes on top to cover the cupcakes as much as we could.
For the “north pole”, we topped the cupcakes with candy cane sticks. We just broke candy canes in half and used half a candy cane on each cupcake.
I love my reusable silicone muffin liners. You can buy them in dozens of colors on Amazon. Or, Wilton makes Christmas-themed disposable liners that would be cute for these North Pole Cupcakes if you are taking them to a party or giving them away as gifts.
