Have you ever heard of Swai? I recently heard this whitefish about from my parents, who had purchased it in Florida. Recently, I saw it my target store and prepared it at home. It's a very mild white fish comparable to tilapia. In fact, I normally make this recipe with tilapia but it worked wonderfully with the swai filets too. What I like about this recipe is that it takes less than 30 minutes from start to finish.
Parmesan Crusted Swai
Milk
Panko bread crumbs (or other bread crumbs)
Olive oil
3 Tbsp. butter, softened
2 Tbsp. lemon juice
1/2 C. grated Parmesan (the kind in the green can)
basil
Cracked black pepper
garlic powder
Preheat your oven's broiler. Dip the fish filets in milk, then in panko.
Saute the filets in olive oil on medium heat until browned slightly.
Remove and place on a baking sheet or pan that has been covered with aluminum foil. Meanwhile, combine butter, lemon juice and Parmesan in a small bowl and set aside.
Broil for 2-3 minutes. Take the filets out of the oven and spread the Parmesan sauce over it. Shake with basil, pepper, and garlic powder according to taste. Put back under the broiler for 2-3 minutes or until cheese is brown and bubbly.
