Too Many Tomatoes? Make Bruschetta!

Here’s a tasty (yet frugal) favorite that is a perfect way to use up the tomatoes in your garden.  We love it on top of garlic toast as an appetizer, or on grilled chicken breasts.

Bruschetta

8 Roma tomatoes, diced
1/2 C. chopped basil
1/4 C. shredded Parmesan
2 cloves garlic, minced

Drizzle and toss with the following mixture:
1 Tbsp. balsamic vinegar
1 tsp. EVOO
1/4 tsp. salt
1 tsp. black pepper

Variation: Add one can of artichoke hearts, chopped.
