Spinach and Goat Cheese Pizza
- 1/2 bag spinach
- 2 cloves garlic, finely minced
- 2 Tbsp. extra virgin olive oil
- tomatoes, thinly sliced
- 4-oz. package garlic herb goat cheese
- 8-oz. package shredded Mozzarella Cheese
- 1 premade pizza crust
Preheat oven to 425 degrees. In a skillet, saute garlic in olive oil over medium heat. Add spinach leaves and toss until wilted. Remove from heat. Arrange spinach leaves on pizza crust. Add goat cheese crumbles, then tomato slices. Top with Mozzarella cheese. Bake until golden brown.
I get all the ingredients for this at ALDI. Their garlic herb goat cheese is just $1.99. At other stores, it runs $4-$5. It’s a true bargain.
