Fast, Frugal and Healthy: Roasted Asparagus with Balsamic Browned Butter

Asparagus is in season right now, so you’re likely to find a good deal on it at your local supermarket. It’s fast, frugal and healthy. Here’s an easy way to prepare it.

Oven Roasted Asparagus with Balsamic Browned Butter

  • 1/2 tsp. Kosher salt
  • Cracked black pepper
  • 2 Tbsp. butter
  • 2 tsp. soy sauce
  • 1 tsp. balsamic vinegar

Preheat oven to 400 degrees.  Spray a cookie sheet with non-stick cooking spray. Place asparagus spears on the tray, and sprinkle with Kosher salt and cracked pepper.  Roast for 12-14 minutes, until tender.

Meanwhile, brown the butter in a small saucepan on the stovetop. Remove from heat and stir in soy sauce and balsamic vinegar. Pour over the roasted asparagus spears, tossing to coat.  Serve immediately.

    We love roasted asparagus. I usually make it with olive oil, garlic and lemon. This sounds yummy! I am going to try this when I roast asparagus for tonight’s dinner!
