Easy Spinach Goat Cheese Salad

Spinach is packed with nutrients and is relatively frugal.  Plus, it stays fresh longer than other greens, leaving less waste (who else is guilty of throwing away fresh produce?).  This Spinach and Goat Cheese Salad is one of my favorite salads.  Even though the goat cheese can be somewhat expensive, a little bit goes a long way.  One 4-oz container (which I purchased at Target for $3.99) was good for about 8 servings.  It’s sure to impress even the most discerning dinner guest!

Spinach and Goat Cheese Salad w/Walnut Vinaigrette
Spinach leaves
Goat cheese crumbles
Pear slices (I used canned pears for convenience)

Dressing:
2 Tbsp. butter
2 Tbsp. red wine vinegar
1/4 C. brown sugar
1 C. chopped walnuts*

In small saucepan over medium heat, melt the butter.  Add vinegar, brown sugar, and walnuts and heat until bubbly.

*MOMMYSAVERS TIP:  Did you know you can buy walnuts in bulk and store them in your freezer?

    You two make me crave a salad!I like spring mix with toasted walnutts ,tomatoes,red onion,.and a can of Mandarian Oranges! I mix the mandarian oranges with some baslamic viegret and mix everything together….yummy!
