I use soy sauce as the base for my teriyaki sauce when I make Hibachi chicken:
Teriyaki sauce:
1/2 large sweet onion, chopped
1/2 cup soy sauce
1/4 cup brown sugar
2 teaspoons ground ginger
2 cloves garlic, minced
1/4 cup vinegar
Cook all ingredients in a sauce pot until onions are caramelized. (I will start this in the morning and let it simmer all day for best results, but you can just let is simmer for about 20 minutes and be fine.)
Place chicken breast in skillet with oil and begin to cook. I put the whole breast in the skillet with a little water, oil, and pepper. Cover tightly with lid and cook until chicken is mostly cooked through.
Once chicken is mostly cooked through, cut into bite size pieces
Put chicken back into skillet and add your homemade Teriyaki sauce. Stir fry until sauce boils and becomes thicker.

curious if you use white vinegar, rice, cider, etc. Seems lke white would be pretty sour, yet w/ the brown sugar, hard to say. Does sound delicious.

I use white vinegar because it is what I have on hand, when we move and re-buy I will use rice vinegar. I like my sauce sweet so I add a bit more brown sugar to it, but not everyone has my sweet tooth.

Tried it tonight – it was yummy, but I think I reduced it down a bit too much or had too much chicken (I used leftover roast chicken) I would’ve liked a little more sauce for my rice.
