With fall upon us and winter coming up soon; soups, stews and chowders are staples at my house. Not only do they warm us up, they keep us full. That’s what made this Easy Bacon Cheddar Potato Chowder recipe a hit with my husband and kids. They liked that it didn’t take long to prepare and it stayed warm in the bowl until the last spoonful.
Easy Bacon Cheddar Potato Chowder
- 3 cups fat-free milk
- 1 can (10.75 oz.) condensed cream of potato soup
- 2 cups frozen hashbrowns
- 1 cup shredded, cheddar cheese
- 3 slices bacon, cooked, drained and crumbled (* 9 tsps. bacon bits)
Mix milk and soup in large saucepan. Stir in hashbrowns. Cook on medium heat until warm. Add bacon and cheese, stirring to combine. Cook on medium to low heat for 10 minutes, stirring frequently.
*I wanted to speed up the process of making this chowder so I didn’t cook up real bacon instead I used 9 tsps. of real bacon pieces (you can normally find these packages down the salad dressing aisle by the croutons).
This recipe can be easily adapted to your families taste such as you can use ham instead of bacon. Add black pepper for more flavoring. When serving it in a bowl you can top it with some additional shredded cheese and bacon along with a few pieces of green onions, thinly sliced.
Serve this Easy Bacon Cheddar Potato Chowder with a side of hearty, crusty bread. I served it with Bavarian Pretzel Sticks that I warmed up in the microwave for a few seconds.
