Mangos are a really sweet and refreshing fruit. They are also usually available at a reasonable price year round. Serve on top of grilled chicken or fish. It’s also great as a snack with tortilla chips.
*Tip: Make your own chips but cutting a corn tortilla into quarters, coat in olive oil and place on a baking sheet. Bake at 350 degrees for about 10 minutes. Sprinkle with sea salt.
Clean Eating: Mango Salsa
- 2 mangos, chopped
- 1 small red onion, diced
- handful of chopped cilantro
- juice from one lime
- chopped jalapeños (optional)
Blend all ingredients and let marinate for an hour before serving.
