What Makes Panera Potato Soup Special?

Why go through the hassle of making this soup at home? Isn’t it easier to drop by Panera? Sure, it is, but there’s a certain satisfaction in whipping up your own batch of this creamy soup.

The Ingredients

Potatoes, of course, are the star of this recipe. But alongside them, we have chicken stock, cream cheese, and cheddar cheese. And let’s not forget the flavorful add-ins… bacon and chives.

Copycat Panera Cream Cheese Potato Soup Recipe

  • 4 c chicken stock
  • 4 c potatoes, peeled and cubed
  • 1/4 c onions, minced
  • 1/2 tsp season salt
  • 1/4 tsp white pepper
  • 1/4 tsp ground red pepper
  • 1 (8oz) cream cheese, cut into chunks
  • crumbled bacon
  • minced chives
  • cheddar cheese

Mix broth, potatoes, onion, and spices. Boil over medium-high heat until potatoes are tender. Smash a few of the potatoes for thickening. Reduce to low heat. Add cream cheese. Heat, stirring, until cheese melts. Spoon into bowls and top with bacon, chives and cheese. Served with a side of crusty bread or a hearty salad, this soup makes a satisfying meal that’s sure to impress.
