Easy Cereal Treat: Dulce de Leche Popcorn Balls

This super-easy popcorn balls recipe comes from my daughter who made them the other night as a snack for our family and they were YUMMY! What’s nice about this recipe is that it’s easy to make, doesn’t require a lot of ingredients (only 5), has around two steps to follow and is relatively frugal. You can make this treat even cheaper with this coupon: Save: $.75/1 Dulce de Leche Cheerios Cereal.

Ingredients:
– 2 cups Dulce de Leche Cheerios cereal (Save: $.75/1 printable coupon)
– 6 cups popped popcorn
– 1 cup large marshmallows (you can use miniature marshmallows, my daughter did and it worked just as well)
– 4 tablespoons butter or margarine
– 3/4 cup dark chocolate chips

To Make the Popcorn Balls:

In large bowl, mix popcorn and cereal; set aside. In 1-quart saucepan, melt marshmallows and 3 tablespoons of the butter over low heat, stirring occasionally, until marshmallows are melted and mixture is smooth. Pour over popcorn mixture; stir until well blended. Spray hands with cooking spray. Shape popcorn mixture into 20 (2-inch) balls; place on ungreased cookie sheet.

In small microwavable bowl, microwave remaining butter and the chocolate chips uncovered on High about 30 seconds, stirring every 15 seconds, until melted and smooth; cool 2 minutes. Drizzle over popcorn balls. Let stand 5 minutes or until chocolate sets.

    I’ve never seen a popcorn ball that uses marshmallows instead of caramel… those look yummy and like they’d stay together really well for kids lunches etc.
