Easy Stuffed Pepper Recipe

Easy Stuffed Peppers

4 bell peppers
1 box Rice-a-Roni, beef flavor
1 lb. ground beef, cooked and drained
1-14 oz. can diced tomatoes
Cheese for topping (if desired)

  • Prepare the Rice-a-Roni according to box directions
  • Cook ground beef, drain well
  • Mix cooked ground beef with can of drained diced tomatoes and cooked Rice-a-Roni
  • Cut the tops off the bell peppers, and clean seeds and ribs from the inside
  • Spoon the rice mixture into the bell peppers
  • Line a cookie sheet with aluminum foil for easy clean-up and place the stuffed peppers on it
  • Top with cheese
  • Bake in a 375 degree oven for 20 minutes

    I made these without the rice a roni because it has MSG so I used a brown rice mix and it came out a little bland. So anyone who is using plain rice remember to add some sea salt. When I ate leftovers I added sea salt and hot sauce and it was super yummy!! Also if you have a hard time getting the ribs out of your peppers a grape fruit spoon works great 🙂 Thanks agin for a tasty recipe!!

    I made these with ground turkey instead of ground beef and I also diced my own tomatoes instead of getting them out of a can. They came out great! The only thing is that they had to bake in the oven for more like 30 mins. Excellent recipe!

      So glad you liked them! I’ve never done stuffed peppers with ground turkey, but that would be a good way to make them even more frugal. 🙂
