Frugal Foreigner: Breakfast for Dinner

My family has always enjoyed having breakfast for dinner.  It’s great for a last-minute meal and it’s frugal.  Eggs are one of the cheapest forms of protein, and other breakfast foods are usually made from scratch.

Since moving to India, we eat breakfast for dinner even more often.  At first it was because we had a hard time adjusting to the foods here, and breakfast food was something our stomachs could handle and I could make with safe ingredients.  Now I make it for dinner on the weekend when we’ve run out of leftovers.

Not only do we eat breakfast for dinner more often here, but I cook an actual breakfast more often – about half the time.  Indians work a later schedule, and my husband doesn’t leave for work until 10:00.  This gives us plenty of time to make a big breakfast together and have that as our family meal for the day.

Two of my favorite go-to breakfast recipes are Nutella Crepes and Puffy Pancakes. Maggie begs for Puffy Pancakes nearly every day.  I’ve never had trouble getting either of the kids to eat them.

I also bake a lot of muffins.  It takes all morning, because we only have a tiny toaster oven, but I love muffins! I’ve tried about a dozen recipes so far and found a few favorites:  my standy-by Pear-Walnut Muffins, Weezie’s Peanut Butter Muffins, and Pumpkin Muffins.  But the best muffin recipe I’ve tried, by far, is the Apple Streusel Muffins.  Brown sugar is not readily available here, but it’s worth $4/lb to make these muffins.

    my kids love “brinner” as it’s called in our house. Their favorite is hashbrown casserole. Hashbrowns, a little cheese, any meat – ham, sausage, bacon, and egg. Viola!

    there are some stores in Bangalore where you can buy American food (so you don’t have to make it all). There was this place called Big Bazaar (in 3rd stage Banashankri), or something like that sold oreos and pringles and all sorts of junk xD
