I have to say thank you to Mommysavers member Ruthie for sharing her Grands! Biscuit Pudding Recipe on our Discussion Forums. I had originally been searching for a bread pudding recipe without raisins, and this was great! I didn’t have pecans, but I substituted chopped walnuts instead. Here’s the version I ended up with:
Grands! Biscuit Pudding Recipe:
8 Grands! Biscuits, dried and crumbled (there are often Grands Biscuit coupons HERE)
1 1/2 C. milk
1 C. cream (if you don’t want to use cream, use 2 1/2 C. milk)
3 eggs
1/2 C. sugar
1/2 C. brown sugar
1 tsp. cinnamon
1 tsp. vanilla
1/2 C. chopped nuts (I used walnuts)
Preheat the oven to 350 degrees. Crumble the Grands biscuits into a greased bread loaf or Bundt pan. Pour in milk and cream and allow the biscuits to soak for 15-20 minutes. In a separate bowl, beat the eggs, sugars, cinnamon, vanilla, and nuts. Stir the egg and sugar mixture into the biscuit and milk mixture, making sure it’s well combined.
Bake for one hour, or until solid. Insert knife. If it comes out clean, the pudding is done. Serve warm. We topped ours with whipped cream. Yummy!
