Mardi Gras Dinner: Easy French Cassoulet Recipe

Looking for something quick and easy to serve for dinner on Mardi Gras? A cassoulet is a typical French dish, slow-cooked with lots of meat. This everyday version is quick, easy, and frugal. No duck. This recipe only takes 20 minutes, and if you’re like me, you have everything on hand!

Easy French Cassoulet Recipe
1/2 lb. chicken breast, cubed
1/2 lb. sausage, sliced
1 can great northern beans, drained
1 can kidney beans, drained
1 can diced tomatoes with garlic
1 tablespoon brown sugar
4 green onions, sliced

  1. Brown chicken in skillet.
  2. Add sausage, beans, tomatoes and brown sugar.
  3. Cook 8-10 minutes until chicken is cooked through.
  4. Top with green onions.
  5. Serve with french bread.

    made the cassoulet and thought it was good but very sweet. next time I would probably not add the sugar. the tomatoes were sweet enough. overall, good recipe. the kids liked it!
