Every year, I either buy a bunny cake or make one for Easter dinner, but with all of the creative Marshmallow Peep ideas being shared on Mommysavers, I decided to make something different. Therefore, I am going to make cupcakes, using none other than Marshmallow Peep bunnies. Both cupcake creations are so easy to make that even your kids can help you make them.
Ingredients:
- 1 box any flavor/brand of cake mix (I used a white cake mix)
- 1 can of white frosting, any brand
- 1 bag of coconut flakes (optional)
- Marshmallow Peeps (bunnies)
- Licorice twists
- Jelly beans
- Mini Robin Eggs (optional)
- Food coloring
First, make the cupcakes according to the directions on the box. I took the batter and divided it in half and with the one half I took some melted chocolate chips and mixed it in, to create a chocolate batter. Bake cupcakes according to the directions on the box.
While the cupcakes are baking, take the can of frosting and divide it into 3 bowls, along with dividing up some of the coconut flakes into 3 other bowls. Now, add drops of food coloring (yellow, purple and green) to each bowl and mix.
To create the first bunny cupcake design:
Frost the cupcake with green frosting, then add the coconut flakes. Next insert one licorice twist into the top of the cupcake creating a handle. Take one Marshmallow Peep bunny and stick it under the licorice twist handle. Now add either jelly beans or Robin Eggs as the final decoration to your Easter Bunny Basket Cupcakes.
Next Design:
First, frost the cupcake with either the purple or yellow frosting, then add the coconut flakes. Take a Marshmallow Peep (bunny) and cut it in half with a sharp knife or kitchen shears. Take the head and put a dab of frosting on the cut part, stick it onto the top of the cupcake in the center and add some extra coconut flakes around the head.
