This week's Muffin Tin Meal was quickly put together to cheer up my poor sick kids. I used muffin cups to make this creative lunch for them to share.
I was inspired by a butterfly quesadilla I saw at I Can Teach My Child. I used homemade tortillas. I am getting better at shaping them into circles! This plate also has taco-ranch dip, carrot sticks, and pineapple yogurt with sprinkles.
Next, I made an apple flower. I used a teardrop-shaped mini cutter to make “petals” from an apple, then arranged them in a flower shape. A muffin cup with peanut butter to dip and more pineapple yogurt (no sprinkles for Boy) finish the meal.
Dalton spooned his yogurt into the peanut butter cup, then ate whatever I could scrape off the plate to feed him. Maggie ate everything else! She loved the butterfly quesadilla, even though I haven't been able to get her to eat a quesadilla in a long time. She even requested it again for dinner.
