Who doesn't love oreo cookies? What's even better are these Oreo cupcakes with Cream cheese frosting. Using a boxed cake mix makes them easy, the cream cheese frosting is what makes them delicious. Finding an Oreo cookie hiding inside at the bottom is an added fun surprise.
I recently made these cupcakes to celebrate the birthday of my workout buddy, who, by the way turned EIGHTY-ONE years old. Someone at the gym said, “These are the best cupcakes I've ever tasted.” Wow, I'll take that compliment!
Oreo Cupcakes with Cream Cheese Frosting Recipe
- One chocolate box cake mix
- 1 package Oreo cookies
- 24 cupcake liners
- One batch Oreo Cream Cheese Frosting (see below)
- Mini Oreo cookies (if desired)
Preheat oven to 350 degrees. Place an Oreo cookie in the bottom of each cupcake liner (24 of them). Next, make a chocolate cake according to instructions on the box. I used devil's food, but you could use any chocolate cake (or even vanilla) for your Oreo cupcakes. Pour about 1/4 C. of batter over the top of each Oreo cookie. Bake your cake according to package instructions. Cool completely before frosting.
Oreo Cream Cheese Frosting Recipe
- 1 8-oz. package cream cheese, softened
- 1/2 C. (one stick) butter, softened
- 1 tsp. vanilla
- 3 3/4 C. confectioners' sugar
- 2 C. chopped Oreo bits
Combine all frosting ingredients in a large bowl and blend with a mixer until well-combined. Spread on cooled brownies and top with a Mini Oreo if desired. I tried to use a piping tip, but the Oreo cookie bits kept clogging it. Next time, I'd chop them a little bit more finely to get a more professional looking frosting job.
