For this week’s muffin tin meal, I continued my Easter-themed lunches and did a muffin tin version of the Resurrection Eggs.
The Resurrection Muffin Tin Meal included:
- lettuce leaves (palm branches)
- sour straw whips (the Indian sour straws are too short to make into a crown of thorns)
- raspberry ice sugar free drink (blood)
- pancake cross
- whipped cream (heaven)
- pancake stone covering an empty tomb
- carrot stick sun
Even with cute presentation ideas, I am still having trouble getting Maggie to eat well. This one was a big success. She ate everything in this tin but the lettuce.
To make the stone over the tomb and the crosses, I put pancake batter in a clean syrup bottle and squeezed it onto the hot griddle. It still took me several times to get a good cross.

I really like your ideas for this theme. My daughter won’t touch lettuce either, but she will eat baby spinach leaves (if we just call them “leaves”). She started eating them by pretending she was a giraffe – could be worth a try?

We also call baby spinach “leaves” and I have no trouble getting the boys to eat it.
