Frugal Scotch Eggs Recipe

Traditional British pub fare, Scotch Eggs are a fun twist on eggs and sausage.   A hard-boiled egg nestled inside a cocoon of sausage and bread crumbs then deep fried?  Sign me up!  Plus, they’re pretty easy to make at home.  Here’s how:

Scotch Eggs Recipe
Hard boiled eggs (we used 9)
Use 1 lb. sausage per six eggs (we used 1 1/2 lb. chorizo sausage)
1/3 C. flour
1 egg (beaten)
1 C. bread crumbs
Oil for frying

Divide your sausage into six pieces per pound.  Next, place flour in one bowl, whisked egg in another, and bread crumbs in the third.  Roll a hard-boiled egg in the flour until well-coated. Wrap the sausage around the egg, pressing and pulling as necessary to make sure you can’t see any part of the egg. Do this with all the eggs.

Meanwhile, start heating up the oil (at least a 1/2 inch of oil).

Take the sausage-covered egg, dip into the egg wash, then roll in the bread crumbs. Do this with all the eggs.

Fry for 8-10 minutes, turning to make sure they are evenly cooked.  If you make the sausage too thick, the sausage in the center won’t be completely cooked. If this happens, you can microwave them for a couple minutes.  Remove with a slotted spoon and drain on a paper towel before serving.

Eat them hot or cold.   One egg per child and two eggs per adult is a reasonable serving size.  Serve with dipping sauces like ranch dressing or spicy mustard (our favorite).
