I made this pumpkin Spice popcorn mix as a quick after school treat for my kids. It only took about 10 minutes to make and it was so easy and delicious! The Pumpkin Spice m&ms are only available at target.
Pumpkin Spice Popcorn
- 1 bag microwave popcorn (or about 1/4 c. kernels, air-popped)
- 1/4 c. butter
- 1/4 c. light corn syrup
- 1/3 c. white sugar
- 1/2 c. pumpkin spice marshmallows
- 1/4 c. pumpkin spice M&Ms
- 1/4 c. peanuts (optional)
Put the popped popcorn in a large bowl, carefully removing it from the bag with your hands so any unpopped kernels remain in the bag.
Stir butter, sugar, and syrup in a saucepan until boiling. ย Boil for 2 minutes. ย Stir in 1/2 c. pumpkin spice marshmallows. Stir for another minute until the marshmallows are mostly melted and pour over the popcorn. ย The longer you cook the sugar and marshmallows, the harder or crunchier the finished popcorn will be. I don't let the marshmallows melt completely, so the popcorn is still chewy.
Mix popcorn and sugar mixture until half coated, then stir in pumpkin spice M&Ms and peanuts. Continue mixing until everything is coated.
