Pumpkin Spice Popcorn (Halloween Treat)

I made this Pumpkin Spice Popcorn mix as a quick after school treat for my kids. It only took about 10 minutes to make and it was so easy and delicious! The Pumpkin Spice M&Ms are only available at Target.

Pumpkin Spice Popcorn

  • 1 bag microwave popcorn (or about 1/4 c. kernels, air-popped)
  • 1/4 c. butter
  • 1/4 c. light corn syrup
  • 1/3 c. white sugar
  • 1/2 c. pumpkin spice marshmallows
  • 1/4 c. pumpkin spice M&Ms
  • 1/4 c. peanuts (optional)

Put the popped popcorn in a large bowl, carefully removing it from the bag with your hands so any unpopped kernels remain in the bag.

Stir butter, sugar, and syrup in a saucepan until boiling.  Boil for 2 minutes.  Stir in 1/2 c. pumpkin spice marshmallows. Stir for another minute until the marshmallows are mostly melted and pour over the popcorn.  The longer you cook the sugar and marshmallows, the harder or crunchier the finished popcorn will be. I don’t let the marshmallows melt completely, so the popcorn is still chewy.

Mix popcorn and sugar mixture until half coated, then stir in pumpkin spice M&Ms and peanuts. Continue mixing until everything is coated.
