These Tex-Mex Meatball Nacho Bites are the perfect appetizer to make during the holiday season, for a Super Bowl party, or any occasion. They’re easy to prepare, look festive, have great flavor and are a definite crowd-pleaser!

Ingredients:

  • 1 (24-32 oz) Bag of Original or Homestyle Meatballs
  • 1 bag Tortilla Chips, Scoop-style cups
  • 1 jar of salsa
  • Shredded lettuce
  • Shredded cheese
  • Sour cream

tex-mex meatball nacho bitesPreheat oven to directions on back of the meatball bag. Lay out meatballs on a baking sheet and bake according to directions on bag. If you don’t want to bake the meatballs, you can also microwave them.

Take your tortilla scoop cups and lay them out on a tray or plate. Place some salsa in each scoop cup. Next add some shredded lettuce on top of the salsa. (*I used a reg. head of lettuce and cut it up into shredded pieces).

tex-mex meatball nacho bitesPlace a cooked meatball on top of the lettuce and add a dollop of sour cream (*I use Top the Tater because that is what I had on hand).

tex-mex meatball nacho bitesLastly, add some salsa on top of the sour cream and finish them off with a sprinkle of shredded cheese on top of each.

You can serve these as-is or you can take some extra sour cream and salsa and lightly mix it together to make a dipping sauce.
