This recipe combines two of my favorite sweet treats: snickers bars and cheesecake. YUMMY!
Mini Snickers Cheesecake Cups
Crust:
2 1/2 C. graham cracker crumbs
2 Tbsp. white sugar
5 Tbsp. melted butter
Cream cheese Filling:
2-8oz. packages softened cream cheese
1 c. granulated sugar
2 eggs
1 Tbsp. pure vanilla
Topping:
2 C. Snickers candy bars, chopped
3 Tbsp. caramel sauce
Preheat oven to 350 degrees. In a large bowl, mix graham cracker crumbs, sugar, and melted butter. Spray 12 muffin tins cups with non-stick cooking spray, and press crust mixture down into each one. Bake at 350 degrees for 5-6 minutes or until lightly browned.
In a separate mixing bowl, combine mixture for cream cheese filling. Beat until smooth and creamy. Drop into each muffin cup, adding about 1/4 C. of the cream cheese to each individual muffin tin. Top with snickers candy, and bake an additional 25 minutes. Cool completely then top with caramel sauce and whipped cream (if desired).

are these made with the mini muffins or regular muffins? I only ask because the title says mini but in the directions it just says 12 muffin tin cups and 1/4 c seems like alot for a mini muffin cup.

I used regular sized muffin cups. I called them mini because they are smaller than regular pieces of cheesecake. Sorry for the confusion!

I think I will try it with MINI muffin tins. That is a little too much sugar intake for a diabetic, but bite size is usually okay. Can’t wait to try it.
