10 Clean Eating Turkey Leftover Recipes (Including 2 Crock Pot Recipes)

Everyone loves turkey leftovers!  I purposely roasted a larger turkey in order to have leftovers. I make sandwiches, more recipes, freeze it, and just do a  delicious Thanksgiving repeat meal.  Many recipes that call for cooked chicken can be substituted with cooked turkey.  Here are some delicious clean eating recipes for leftover turkey.

Paleo Turkey & Vegetable Soup:  This is a standard comforting soup for the cold weather with a little bit of a twist.

Turkey Barley Soup (Crock Pot):  Here is another delicious soup idea that can be make in the crock pot!

Turkey Cranberry Salad:  Upgrade your typical turkey sandwich with this delicious alternative.

Healthier Cobb Salad:  This salad would be delicious with cooled cubed leftover turkey.  The recipe includes a Lemon Dijon Salad Dressing HERE.

21 Day Fix Enchiladas:  This recipe has a nice little kick to it and a lot of flavor.  Just substitute the chicken for diced turkey.

Turkey and Cranberry Spinach Salad: While the original recipe calls for chicken, I think we can all agree that turkey would taste amazing on this salad.  Again, the dressing recipe is included HERE.

Thai Turkey Lettuce Wraps:  Here is another example of a healthy upgrade to traditional turkey sandwiches.

Slow Cooker Turkey Pad Thai:  This recipe is on my “must-make” list!  It’s actually designed for leftover turkey.

Thanksgiving Shepherd’s Pie:  This recipe is made completely from leftovers: turkey, stuffing, mashed potatoes, and cranberry sauce.  As long as those recipes are clean eating, this recipe will be as well.
