Bacon-Wrapped Jalapeño Poppers

Bacon Wrapped Jalapeno PoppersAlso known as atomic buffalo turds, these bacon-wrapped jalapeños are one of our favorite appetizers. After all, what doesn’t taste good with bacon wrapped around it? Despite the fact that jalapeños are used, they aren’t too spicy.  Plus, with only a few ingredients, they’re easy to make.

You’ll Need:

  • 12 jalapeños
  • One block cream cheese, seasoned to taste (see below)
  • Lil Smokies
  • Bacon
  • Toothpicks

Soften cream cheese. You can flavor the cream cheese any way you’d like. I added a little cajun seasoning and Cheddar cheese this time. I’ve also added brown sugar for a smoky-yet-sweet flavor. It’s up to you, so get creative!

Cut the jalapeños in half and remove the seeds. Be careful! I had my son do this job and the oils from the jalapeño irritated his face (bad mom, I know). I recommend using gloves when you do this.

Next, spread the cream cheese inside the jalapeño. Top with a lil smoky and wrap with bacon. Secure with a toothpick.

Place on a smoker (if you have one) until the cheese melts and the bacon is done.  When we are doing ribs on the smoker, we throw these on at the end because they don’t take as much time.  Otherwise, bake at 400 degrees for about 15 minutes.
